ISTRIA Fuži WITH TRUFFLES
Istrian fuži (pasta) with truffles is a true culinary treasure of Istria. This traditional homemade pasta combined with aromatic truffles offers a unique gastronomic experience. This classic of Istrian cuisine perfectly combines local ingredients and the centuries-old tradition of preparing fuži, with the irresistible aroma of fresh white or black truffles.
Ingredients (for 2 people):

250 g fresh Istrian fuži

20 g fresh white or black truffles

2 tablespoons truffle butter

50 ml heavy cream (optional for a creamier version)

Pinch of salt

Freshly ground black pepper

Parmesan or Grana Padano cheese for sprinkling
Preparation:
- Cook the fuži in salted water according to instructions (about 7-8 minutes if fresh).
- In a pan over low heat, melt the truffle butter.
- Transfer the drained fuži to the pan with butter, add a little cooking water for better texture.
- If desired, stir in the cream and mix briefly until all ingredients are combined.
- Grate fresh truffles directly onto the pasta and gently stir.
- Serve hot with additional grated cheese and a few more thin truffle slices on top.
Serving tip:
This dish pairs well with a glass of premium Istrian Teran wine, whose fruity notes perfectly complement the rich flavor of truffles.
