ISTRIA Fuži WITH TRUFFLES

Istrian fuži (pasta) with truffles is a true culinary treasure of Istria. This traditional homemade pasta combined with aromatic truffles offers a unique gastronomic experience. This classic of Istrian cuisine perfectly combines local ingredients and the centuries-old tradition of preparing fuži, with the irresistible aroma of fresh white or black truffles.

Ingredients (for 2 people):

  • 250 g fresh Istrian fuži

  • 20 g fresh white or black truffles

  • 2 tablespoons truffle butter

  • 50 ml heavy cream (optional for a creamier version)

  • Pinch of salt

  • Freshly ground black pepper

  • Parmesan or Grana Padano cheese for sprinkling

Preparation:

  1. Cook the fuži in salted water according to instructions (about 7-8 minutes if fresh).
  2. In a pan over low heat, melt the truffle butter.
  3. Transfer the drained fuži to the pan with butter, add a little cooking water for better texture.
  4. If desired, stir in the cream and mix briefly until all ingredients are combined.
  5. Grate fresh truffles directly onto the pasta and gently stir.
  6. Serve hot with additional grated cheese and a few more thin truffle slices on top.

Serving tip:
This dish pairs well with a glass of premium Istrian Teran wine, whose fruity notes perfectly complement the rich flavor of truffles.
