RAVIOLI WITH TRUFFLES
Truffle ravioli perfectly represents the exquisite cuisine of Istria, blending homemade pasta with the noble flavors of truffles. Rich and creamy stuffed ravioli, topped with an aromatic truffle sauce, represents the perfect balance between texture and flavor. Ingredients (for 2 people):
For the dough:

200 g all-purpose flour

2 eggs

Pinch of salt
For the filling:

150 g ricotta cheese

50 g grated Parmesan cheese

1 egg yolk

5 g freshly grated truffles

Salt and pepper to taste
For the sauce:

2 tablespoons truffle butter

50 ml heavy cream

10 g fresh truffles

Salt and pepper to taste

Additional freshly grated Parmesan for serving
Preparation:
- Preparing the dough: On a work surface, form a mound of flour and make a well in the center. Add eggs and a pinch of salt, then knead into a smooth dough. Wrap it in plastic wrap and let it rest for 30 minutes.
- Preparing the filling: In a bowl, mix ricotta, grated Parmesan, egg yolk, grated truffles, salt, and pepper. The mixture should be smooth and compact.
- Making the ravioli: Roll out the dough thinly on a floured surface. On one part of the dough, place small mounds of filling with a teaspoon, cover with another layer of dough, gently press around the filling to remove air, and cut out the ravioli with a cutter.
- Cook the ravioli in boiling salted water for 3-4 minutes.
- Preparing the sauce: In a pan, heat butter with truffles and cream over low heat. Add freshly grated truffles, stir briefly, and season to taste.
- Transfer the drained ravioli directly into the sauce and gently stir to combine everything.
- Serve immediately, topped with grated Parmesan and fresh truffle shavings.
Serving tip:
This refined dish is best enjoyed with a glass of Istrian Malvasia or sparkling wine. It’s crucial to use the freshest truffles possible to maximize the aroma.
