FRITTAJA WITH TRUFFLES
Frittaja with truffles is one of the most famous Istrian dishes that perfectly highlights the authentic flavors of the region. Easy to prepare, yet exceptionally rich in aroma, this frittata is an ideal breakfast, lunch, or light dinner. The perfect blend of fresh eggs and Istrian truffles transforms an ordinary meal into a top-notch gastronomic experience.
Ingredients (for 2 people):

4 fresh eggs

10 g of fresh white or black truffle (your choice)

1 tablespoon of truffle butter

Pinch of salt

Freshly ground black pepper

A little olive oil (optional)
Preparation:
- Crack the eggs into a bowl, add a pinch of salt and pepper, and gently mix with a fork (don’t whisk too much to maintain texture).
- Heat a pan with truffle butter over low heat.
- Pour in the eggs and gently stir with a wooden spoon as the frittata slowly thickens.
- When the frittata is almost cooked, grate fresh truffles directly onto the eggs and gently stir for a few more seconds.
- Serve immediately, optionally with a piece of warm homemade bread and a glass of Istrian Malvasia.
Serving tip:
The truffle frittata is best when prepared with fresh truffles immediately after harvesting. If desired, you can add some grated cheese or thinly sliced pancetta for a richer flavor.
