Tagliatelle with truffles is a classic dish that celebrates the simplicity and elegance of Mediterranean cuisine. Fresh pasta perfectly absorbs the aroma of truffles, creating a harmonious blend of scent and taste. This recipe is ideal for special occasions or for everyday enjoyment of the magic of Istrian truffles.
Ingredients (for 2 people):

250 g fresh tagliatelle

20 g fresh white or black truffles

2 tablespoons truffle butter

50 ml cooking cream (optional)

Pinch of salt

Freshly ground black pepper

Parmesan for serving
Preparation:
- Cook the tagliatelle in salted water according to the package instructions.
- Melt the truffle butter in a pan over low heat.
- Drain the pasta (reserve some cooking water) and transfer it to the pan with the butter.
- Add cream for a creamier texture if desired, and stir gently.
- Grate fresh truffles over the pasta, adding a little cooking water if needed for better creaminess.
- Serve warm with grated Parmesan and an extra amount of fresh truffles on top.
Serving tip:
This dish is ideally served with a glass of Istrian Malvasia or Teran. It is not recommended to use too many spices so as not to overpower the truffle aroma.
