COD FILLET WITH BLACK TRUFFLE
Cod fillet with black truffle is a dish that perfectly combines the freshness of seafood with the intense aromas of Istrian truffle. This recipe brings a balance between the light and delicate flavor of cod and the rich, earthy note of black truffle. It’s also a luxurious choice that will impress any gourmet.
Ingredients (for 2 people):

2 cod fillets (about 150 g each)

20 g black truffle butter

2 tablespoons olive oil

1 small black truffle, thinly sliced

2 cloves garlic, finely chopped

Fresh parsley for garnish

Salt and pepper to taste

1 lemon (juice and zest)

50 ml white wine (preferably Malvasia)
Preparation:
- Fish preparation: In a well-heated pan with olive oil, place the cod fillets that you have previously dried with a paper towel. Cook them over medium-high heat for about 3-4 minutes on each side until they achieve a nice golden-brown color. Salt and pepper to taste.
- Sauce preparation: In another pan, melt the black truffle butter and add the chopped garlic. Gently fry until the garlic softens, being careful not to burn it. Add the white wine and let it simmer over low heat for 2-3 minutes until the alcohol evaporates.
- Once the wine has reduced, add the thinly sliced black truffle slices and gently stir.
- Serving: Place the cooked cod fillet on a plate, drizzle it with the aromatic truffle and garlic sauce, and garnish with a few fresh parsley leaves and grated lemon zest.
Serving tip:
This sophisticated meal is best served with a light white wine such as Istrian Malvasia or Chardonnay. If you want additional depth of flavor, serve with lightly cooked vegetables like asparagus or Swiss chard.
